Fish is a staple food from where I come from. Traditionally Bengalis are notorious for being passionate about food, especially fish. We all know that eating fish can improve heart health . The age old recipe requires frying the fish in oil before making a curry. Frying can take away the positive health benefits of eating fish.Instead of frying, I discovered that grilling, broiling or even stir-frying can make a lot of difference to the nutritional value . I am posting a picture of the fish I made today using very healthy ingredients. Using a chinese wok helped me control the oil and heat needed for the preparation. Since the process is very simple and quick, all the ingredients have to be ready to go.Also covering the food while cooking saves energy and preserves the essential nutrients.
What you need- Fish(cut up),onions(chopped),ginger,garlic,tomatoes(whole or pureed),cilantro,mint,ginger,bayleaf,cinnamon,turmeric,cayenne pepper.
Start the wok on heat and fry onion,ginger,garlic in 2 tablespoons of oil ...Once they turn golden..add the fish and tomatoes and spices......add two or three cups of water depending on the amount of fish. Let it simmer for 5 minutes and serve hot with Wild Rice.
Wild rice is essentially grown in Africa. Wild rice can take over the traditional basmati rice any day. Wild rice has lots of fiber and anti-oxidants to help maintain a slender waistline!
